3 large tomatoes, cored and cut into 1-inch chunks
1 large onion, cut into thin half-moon slices
1/2 cup vegetable oil
1/2 cup apple cider vinegar
1/3 cup sugar
1 teaspoon dried Italian seasoning
1 teaspoon salt
1/4 teaspoon black pepper
In a large bowl, combine tomatoes and onion; set aside.
In a small bowl, whisk together oil, vinegar, sugar, Italian seasoning, salt, and pepper until sugar is dissolved. Pour over tomato mixture; mix well.
